• 6 cups seedless watermelon
  • 1/2 cup lemon juice (freshly squeezed, about 4 lemons)
  • 1/4 cup sugar
  • 1/4 cup lite coconut milk (unsweetened)
  • 1 tablespoon mint (freshly chopped, or more to taste)

Place freshly squeezed lemon juice and sugar into your blender.
Remove the outside rind of your seedless watermelon and cut it into 1-inch chunks.
Place the watermelon pieces into the blender. Puree until smooth. If there happens to be any black seeds in your watermelon, use a fork to remove as many as you can find at this point.
